ISO: recipe for irish afternoon tea

I would be interested in receiving suggestions for what to serve at an Irish afternoon tea. The tea is a birthday celebration for my mother who will be 87 on March 19 and as a family we are are planning a surprise birthday party for her. Her Irish roots have always been a significant part of her life. As children we heard the story of her father being born on the boat at about the same time it docked in Canada when her grandparents emmigrated from county Wexford at the time of the famine. We would like to make this a special celebration since she is now loosing her sight. Thanks in advance.
