ISO: Redfish Ponchatrain

Does anyone have a recipe for redfish Ponchatrain i have been unable to find the recipe for Ponchatrain sauce.

I also have been trying to find a Lafette sauce. I had it at Ralf and Kacoo's restaurant in Louisiana.
