ISO: Request for HELP!! planning a party for over 100!

My husband is getting a promotion in the Navy in April and we are planning a party for a buffet style dinner for about 100-125. I want to do an Asian style meal since we live in Hawaii. I was thinking of doing chicken teriyaki, chow mein style noodles with a salad of some sort. I would like to do ALL of the meal ahead of time so I can socialize and enjoy myself (HA!HA!) I am planning on getting puupuus from an outside source (wonton, egg roll, etc)
HELP!! any suggestions for figuring out amount of food, etc would be of greatest appreciation!!! Any recipe ideas would be super too...Thanks!
