ISO: Roselyn Bakery Gingerbread Men Cookies

Growing up in Indianapolis, IN, we would buy the smaller of the 2 sizes of Gingerbread Men from Roselyn Bakery. Does anyone have a recipe that they have tried for these? They are not like the usual texture that most recipes have...in fact I was told they have extremely fine ground coconut as one of the ingredients but I am not sure.
