ISO: Ruth Chris Chopped Salad - how do they stack it?

I have found the recipe for the Ruth Chris Steak House Chopped Salad. At the restaurant here in Memphis, they serve this salad in a stacked up round cylinder shape. It comes out on a cold plate stacked perfectly round with a flat top which has the fried red onion rings on top. Does anyone know what they use to stack the salad and how they get it to keep the form?
