ISO: Spiced Carrots and Pink Onions

I am hunting for a couple of recipes that I got out of a women's magazine about 10 to 11 yrs ago. for some Canned gifts that included Spiced carrots and another was pink onions.

They were put in jars for gift giving, but you are able to eat them in a few days without having to wait a couple of weeks.
