ISO: Spicy Marinated Carrots

I had this in a Mexican restaurant once... they gave carrot sticks that were marinated in some vinegar/pepper concoction, instead of the usual tortilla chips. The recipe may have had onions in it and possibly oregano. But the main ingredients were the spicy carrot sticks. The carrots may or may not have been blanched first... the appetizer was served at room temperature or cold. Does anybody have a recipe like this??
