Recipe(tried): Grandma's Sweet Spicy Pickled Carrots

My grandmother gave me this recipe.

Grandma's Sweet Spicy Pickled Carrots

8 cups finely sliced carrot sticks.
2 cups apple cider vinegar.
2 cups white sugar.
1/2 tbsp whole cloves
1/2 tbsp whole allspice
2 tsps oregano (powdered)
2 tsps garlic powder
2 sticks cinnamon
1 1/2 tsp cayenne pepper
1/2 tsp sweet basil (powdered)
1 medium sized onion finely cut, so you have rings.

Peel the carrots and cut into 1/2 - 3/4 inch long pieces . Add onion . Cook covered in small amount of salted water about 5 to 6 minutes or until carrots are still firm but tender. Drain. Combine 1/ 1/2 cups water, vinegar and sugar in pot. Add all spices tied in a double piece of cheesecloth tightly tied. Bring to a boil. Add carrots, cover and let stand at room temperature until the next morning. Bring to a boil again, reduce heat and simmer, uncovered 2-3 minutes. Remove sachet of spices and pack carrots and onions in clean hot pint jars. Add a small piece of fresh jalepeno pepper to each jar if you want extra spice. Fill to 1/2 inch from top with hot syrup. Seal immediately.
Process 10 minutes in hot water bath.

Store in a cool dark place for 2-3 weeks.
