ISO: Stay Moist Chicken Breast Recipe for Hot Buffet

We are having a party with relatives and my son's friends for his birthday and need a recipe for a tray of chicken that will be moist. I have 15-20lbs of chicken breast I'd like to make the day before and reheat or finish cooking day of. I don't want it to be a casserole recipe-Thanx in advance!
