ISO: Strawberry Kiwi jam

I give away about 36 jars each year.

3 c. crushed strawberries
3 kiwi, peeled and diced
1 T. lemon juice
1 T. minced crystalized ginger (optional)
1 pkg. powdered pectin
5 C. sugar

Combine fruit, juice, ginger and pectin in large sauce pot. Bring to a rolling boil, stirring frequently. Add sugar and return to rolling boil, stirring constantly. Boil hard 1 minute. Remove from heat. Skim foam if necessary. Pour hot into hot jars. Process 10 min. in boiling water bath. Yield: 6-7 half pints.
