Recipe(tried): Pineapple Kiwi Jam

Pineapple Kiwi jam

4 kiwi, peeled and sliced 1.8 inch thick
3 cups sugar
1/4 cup lime juice
1 8ounce can crushed pineapple, undrained
1 3 ounce package liquid fruit pectin
3-4 drops green food color

Microwave directions
In 2 quart mw safe bowl, combine kiwi, sugar, lime juice and pineapple. Microwave on HIGH for 11 1/2 to 16 minutes or until mixture comes to full rolling boil, stirring evey 2 minutes. Stir in liquid pectin. Microwave on HIGH for 2-3 minutes or until mixture comes to full rolling boil. Microwave on HIGH for 1 minutes. Skim foam; sitr in food color. Spoon into 5 clean, hot 8ounce jars or into freezer containers. Cool slightly. Process in jars for 5 minutes or freeze for 3 months. 4 1/2 cups.

After Christmas I usually purchase some holdiay stemware, hopefully cheap, and make this and a cranberry-pepper jelly. For Christmas gifts I give 2 pieces of stemware with a green and red jelly in each and seal with paraffin. Right before giving on top of the parafiin used for sealing I beat hot paraffin in the mixer till foamy and add about a 2 inch high topping on the stemware. This makes a nice hostess gift or just a little thank you. Realizing you can't find Christmas stemware now, probably. But you could find some inexpensive stemware and dress it up at Christmas with some ribbon. Hope this is helpful in using your kiwis.
