ISO: Tart Crust

My daughter is a senior this year and love to attend Johnson & Wales to get her degree in Baking and Pastry chef. Well have you ever seen what it cost to go to that school. WOW....any ways she is entering a contest for chef of the year to win a scholar ship and needs help in perfecting her tart crust. She is trying to make a coconut tart crust but has been unable to make it crisp enough to cut with a fork. Can anyone help her?
