ISO: Tender pork chops & stuffed pork chops

Everytime my husband grills thick center-cut chops, they are as tender as I would like. It's not that he overcooks them (we like a little pink in the center which is SAFE nowadays), and they're not tough per se, they are just not as tender as I think they should be. I'm very hesitant to have them because of this. Any suggestions? ALSO, I've never tried to make stuffed chops and would like a good recipe for them as well. I'm afraid they'll be tough so I've shied away from them too. You experienced pork chop cook, please help me. Thanks so much. **CORRECTION: first sentence should read they are NOT as tender as I would like.***
