These turned out so tender and the taste was out of this world!! Hope you
enjoy!!
6 center cut pork chops (About 1 inch thick)
3/4 cup dry vermouth**
4 Tbls minced fresh sage or 4 teaspoons rubbed sage
2 Tbls Soy Sauce
1 Tbls olive oil
2 minced clove garlic
1/2 tsp black pepper
1 Tbls butter
1 medium onion
1 Apple cored and diced ( I use Granny Smith)
1/2 tsp salt
2 cups fresh firm textured white bread crumbs ( I use sour dough french bread
cut into very small cubes,removing crust)
Cut pocket in each chop using tip of thin sharp knife. Combine 1/4 cup
vermouth, 2 Tbls fresh sage (or 2 tsp rubbed sage), soy sauce, oil,garlic, and
1/4 tsp pepper in glass dish. Add pork chops, coat, and place in refrigerator
to marinade aprox. 1/2-1 hour.
Heat butter in large skillet over medium het until foamy. Add onion and apple;
cook and stir about 6 minutes until onion is tender. Stir in remaining 1/2 cup
vermouth**, 2 Tbsp fresh (or 2tsp rubbed) sage, 1/4 tsp pepper, and salt. Cook
and stir over high heat about 3 minutes until liquid is almost gone. Transfer
nion mixture to large bowl and stir in bread crumbs.
Spoon onion mixture into pockets of pork chops, close openings with wooden
toothpicks ( Before using toothpicks, soak them in hot water for 15 minutes,
this prevents them from burning on the grill)
Grill chops aprox. 5 minutes per side.
** I used 1/4 cup apple juice and 1/4 cup vermouth in the stuffing
mixture...infact you could if you wanted substitute all of the vermouth with
apple juice but I suggest you try using some vermouth because it adds a
wonderful and unique flavor... I sure hope you enjoy!!
