Recipe: Impossible Italian Chicken Pie (using cooked chicken, Bisquick recipe)

IMPOSSIBLE ITALIAN CHICKEN PIE

1 1/4 cups cut-up cooked chicken
1 medium tomato, chopped (3/4 cup)
3/4 cup frozen green peas
1/2 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
1 1/4 cups Bisquick Original or Reduced Fat baking mix
1 cup milk
2 eggs
Pizza sauce, heated (optional, for serving)

Heat oven to 400 degrees F. Generously grease pie plate, 9x1 1/4 inches.

Mix chicken, tomato, peas, cheese and Italian seasoning in pie plate; set aside.

Stir baking mix, milk and eggs with fork until blended; pour into pie plate.

Bake uncovered about 35 minutes or until knife inserted in center comes out clean.

Serve with pizza sauce, if desired.

Makes 6 to 8 servings
