ISO: Tomato and Onion Bread Pudding?

About 35 years ago I was in the county hospital and was served a dish that was cooked with (what seemed like canned) tomatoes, onions and white bread. It was baked because it was kind of toasty and a little krispy on top and a bit mushy (like bread pudding)inside. Sounds yucky but tasted great!. It seemed like the bread may have been white and was scraps including crust or just torn up white bread.
Can anyone help or is this one too bizarre?
