ISO: Tried and true Irish stew recipe

Hello, I am searching for a tried and true flavorful irish stew. I want to steer clear of any with Guinness as I have never cooked a stew with beer and am afraid to try it out on guests. I have cooked with white wine and red with much success, but hear beer is bitter. I would love any recipes for either lamb or beef. TIA!
