Recipe: Pork Shoulder Steaks with Onions (1950's)

PORK SHOULDER STEAKS WITH ONIONS

4 pork shoulder steaks, cut 1/2-inch thick
2 tablespoons lard or drippings, if necessary
1 1/2 teaspoons salt, divided use
1/8 teaspoon ground black pepper
1 teaspoon prepared mustard
3 medium onions, cut in 1/4-inch thick rings

Brown steaks in lard or drippings or in own fat. Pour off drippings.

Season steaks with 1 teaspoon salt and pepper. Spread each steak with 1/2 teaspoon mustard. Lay onion rings on top. Sprinkle remaining 1/2 teaspoon salt on onions. Cover tightly and simmer 45 minutes or until steaks are done.

Makes 4 servings
