ISO: wheat free packed lunch

I am trying to keep my ten year old dyslexic son on a wheat-free diet but struggling with packed lunches. He ends up eating only the crisps, fruit and rice bar, and will have cold meat sometimes. Rejects wheat-free bread and rolls.
Any ideas gratefully received!
