LUCHOW'S COLD HERB SALAD DRESSING
2 hard-cooked eggs
1 raw egg yolk (pasteurized)
1/2 cup olive oil
1 tablespoon minced mixed fresh herbs (parsley, oregano, thyme, chives)
1/2 teaspoon dry mustard
1 1/2 teaspoons lemon juice or vinegar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Chop egg whites. Mash hard-cooked yolks and beat with raw yolk; add oil, a few drops at a time. Add herbs, mustard, lemon juice or vinegar, salt and pepper. Beat well. Add chopped egg white last.
Makes about 3/4 cup dressing, 6 servings
