The information is not included in the recipe. I might assume that it is probably the plain mustard that we use for everyday use. There is a delightful honey mustard sold here in Domenico's (a specialty food store at San Juan) called HONEYCUP PREPARED MUSTARD that is delicious. The truth is that the listed ingredients are: brown sugar (not honey), mustard, flour, cider vinegar, canola oil, spices,& salt. The mustard is produced by Stone County Inc. from Don Mills, Ontario Canada. That might be a good addittion to the recipe.
