Katie Brown's Ideas for Thanksgiving Leftovers

TURKEY PASTIES
Makes 4

2 cups shredded leftover turkey
1/2 cup leftover turkey gravy
1/2 cup leftover glazed carrots, chopped
1/2 cup leftover Brussels sprouts, leaved
1/2 cup leftover mashed potatoes
1 box ready made pie crust
1 egg beaten
Salt & pepper to taste

Preheat oven to 450 degrees.

In a medium sized bowl mix turkey, gravy, carrots, Brussels sprouts, mashed potatoes, salt and pepper.

Cut the pie crust rounds in half. On one side of each half, place a small handful of mixture and fold the other side of the dough over the mixture, creating a triangle shape. Gently press along the edges to seal the pastie. Place on cookie sheet and brush with egg wash.

Bake for 11-15 minutes, until crust is golden brown.


THANKSGIVING SHEPARD'S PIE
Makes 1 pie, serves 4-6

2 cups shredded leftover turkey
1 cup leftover mixed vegetables
2 cups leftover stuffing
2 cups leftover mashed potatoes

Preheat oven to 350 degrees.

Combine turkey and vegetables.

Spread stuffing in a 9 inch pie plate, layer turkey mixture onto stuffing and top with mashed potatoes.

Bake 30 minutes or until potatoes are golden brown.


PILGRIM PANCAKES
Serves 4

3 cups leftover mashed potatoes
1 cup chopped leftover turkey
Small onion, chopped
2 tbsp chopped parsley
2 eggs
1/2 cup milk
1/4 cup olive oil
Chives for garnish
Applesauce for garnish

Combine turkey with mashed potatoes, onion, and parsley.

Whisk eggs and milk in a shallow bowl.

Heat the oil in a large saut pan over medium heat.

Form patty from the potato mixture, about 4 inches across and 3/4 inch thick.

Dip patty in the egg batter and transfer to pan. Cook each side until golden brown, flipping carefully.

Serve with applesauce and chopped chives.


BARBEQUE TURKEY SANDWICH
Makes 4

3 cups shredded leftover turkey
1 bottle BBQ sauce
1/2 pound sliced cheddar cheese
1/2 pound coleslaw
4 buns, toasted

Toss chicken with as much BBQ sauce as you like. Put BBQ turkey on toasted bun. Top with coleslaw and cheddar cheese.
