Thank You: Marrow and Ginger Jam

Thank you N. Bolland from New Zealand for posting this recipe way back in 2002.

It is Marrow season again here, and once more we have been gifted with surplus marrows, but for the last two years at least they do not clutter up the counter tops making me feel guilty, until they are no longer usable.

They all are made into your delicious Marrow and Ginger Jam, and those pots fly off the shelves in weeks.

I gave some to an elderly friend who said it brought back many fun memories as it was of one of the most sought after treats in Britain during World War II. Marrows were easier to find than most fruits, and as you said could be flavoured with whatever was around to make a tasty jam.

A super and very unusual recipe. Thanks again.
