DATE BOX CAKE
1/2 cup butter, softened
1 1/2 cups sugar
1 cup chopped dates
1 cup mashed banana
1 cup crushed pineapple, drained
2 cups cake flour
1/2 tsp. baking soda
1 tsp. baking powder
1/2 cup sour milk
1/2 cup chopped nuts
Cream butter, sugar and add dates and beat. Add banana to mixture, then crushed pineapple. Mix.
Sift dry ingredients together 3 times. Add to mixture alternately with sour milk. Stir in nuts. Pour into 13x9-inch baking pan that has been greased and floured.
Bake 35 to 40 minutes in 350 degree F oven. Ice with caramel icing.
DATE PINEAPPLE CAKE OR BARS
1 cup flour, sifted
1 tsp. baking powder
1/2 tsp. salt
2 large eggs
3/4 cup sugar
1 tsp. vanilla
1/2 cup drained crushed pineapple
1 cup dates (sliced)
1/2 cup chopped nuts
Sift flour, baking powder and salt together; set aside.
Beat the eggs; add sugar and beat well. Stir in vanilla. Add the dry ingredients and pineapple, dates, and nuts. Spread in a greased 11x7-inch baking pan.
Bake at 350 degrees F until cake tests done. Cool in pan on rack.
Cut into bars and roll in powdered sugar or use as a cake and frost.
FOR THE LEMON ICING:
Lemon Iced Ambrosia Bars
Hi Therese,
I hope someone will have the exact recipe you're looking for. These recipes looks similar and I've included a separate recipe for Lemon Icing. I haven't tried the recipes so I can't vouch for them. If you remember the bars being thinner, you can try baking them in a jelly roll pan/sided cookie sheet. Baking at 350 should still be fine and, as you probably know, they just won't take as long to bake.
