Thank You: Pastel de Tres Leches

Thank you, HCPCS/GA for posting that recipe, and thank you Kimmie for requesting it -- that sounds like the MOST decadent dessert and I was hoping that a reader here would have the recipe the minute I read your request!

I have had the same quest in the past, especially before the internet and sites like this made it easier to find recipes from TV shows. I could find recipes for similar traditional recipes in cookbooks, but, I wanted to try some of those recipes that these famous chefs created, which were often based on the traditional but had a new twist. Sometimes, the recipes took traditional recipes from other parts of the world and adapted them to ingredients readily available here, which was a huge help to me. I am mostly a proponent of cooking from very fresh, local, seasonal and simple ingredients, but sometimes it’s fun to push the limits. Now that I’ve had a few years of serious cooking practice, having the exact recipe is less important to me as hearing the ideas presented – except when it comes to baking!

As Gina mentioned, the original Tres Leches cake is a dream on it’s own, but you just have to “know” that a twist from someone as talented as Rick Bayless will be worth trying.
