June, thank you so much for your response. In the mean time I did make my pie (with tapioca) and it was delicious. I also froze the rhubarb (unblanched) and strawberries in separate ziplock bags...my assumption was right. You've given me a great tip about not defrosting the fruit all the way, as I would of had mush.
