Recipe: Shirley's Mother's Banana Cake (1970's)

SHIRLEY'S MOTHER'S BANANA CAKE

2 1/2 cups flour
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
1 2/3 cups sugar
2/3 cup shortening
3 eggs
1 1/4 cups mashed ripe banana
2/3 cup buttermilk
2/3 cup walnuts, chopped

Preheat oven to 350 degrees F. Grease a 13x9-inch baking pan or two 8-inch layer cake pans.

Combine flour, baking powder, baking soda and salt; set aside.

Cream sugar and shortening together. Beat in eggs and banana. Add to dry ingredients alternately with buttermilk. Beat until well combined. Stir in walnuts. Pour into prepared pan(s).

Bake at 350 degrees F for 40-50 minutes (30-40 minutes for layers) or until done.
