Thank You: Thanks Dianne, I made the Healthy Coconut Shrimp tonight!

It was yummy. I was wondering, do you use unsweetened coconut. I didn't get a chance to go to the store I usually buy it at, so used the sweetened I had at home. It was good, browned quickly, tho, so I thought next time I would use unsweetened. Thanks for posting a great recipe!
