IDEAL MARKET TUNA SALAD
"Is there a better salad than tuna with a healthy amount of mayo and crunchy bits of celery, onion and pickle? Here's a popular tuna salad served in the deli at Ideal Market in Boulder, Colo."
1 (6 ounce) can chunk white tuna in water, chilled, drained well
1/4 rib celery, washed and finely diced
1 green onion (scallion), chopped
1/4 large kosher dill pickle, diced fine
1 sprig parsley, washed and chopped
2 tablespoons mayonnaise
1 teaspoon smooth Dijon mustard
1/4 teaspoon fresh-ground black pepper
1 pinch celery salt
1 pinch thyme
Fresh lemon juice, to taste
Combine all ingredients until well mixed. Taste and adjust seasonings.
Refrigerate tightly covered until ready to use in salads or sandwiches.
Makes 2 servings
