Recipe: Marinated Cucumbers (sweet and sour, make ahead) (1988)

MARINATED CUCUMBERS

"This is a delicious version of sweet and sour cucumbers."

3 cups (2 medium) thinly sliced cucumbers
1/4 cup chopped onion
1 medium red or green bell pepper, cut into thin strips
FOR THE DRESSING:
1 cup sugar
1 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon mustard seed
1/2 cup cider vinegar

In large non-metal bowl, combine cucumbers, onion and red pepper.

In small bowl, combine sugar, salt, celery seed, mustard seed and vinegar; blend well. Pour over cucumber mixture; toss to coat.

Cover; refrigerate at least 24 hours, stirring occasionally. If desired, drain before serving.

Makes 12 servings (1/4 cup each)
