Hello everybody

Would anyone have a recipe from the old Woman's Day Encyclopedia of Cookery, Vol 2, for Banana Bread? When we moved, I lost some kitchen items and recipes. This one is a favorite of our sons. It is made with white sugar, oil, eggs, bananas, flour, I think vanilla and I am not sure of baking soda or baking powder. I have been looking for this recipe for months, so far with no luck. This recipe was taken from Woman's Day Magazine in the 50's, it may not be what you are looking for but it is the best I have ever tasted.

Hawaiian Banana Bread
1/2 cup sugar
1/2 cup shortening
2 eggs
3 bananas=(1 cup, smashed)
1 1/4 cup flour
1/2 tsp salt
1 tsp soda
Sift dry ingredients together, place all other ingredients in bowl and whip with mixer. Fold in dry ingerdients quickly. Put in greased and floured 9X3 loaf pan Bake at 350 degrees for 40-45 minutes. I add a cup of chopped walnuts.

I receive many compliments and requests for this recipe. It is a dark moist bread.

Thanks Marge!--I am going to try it right now. In addition to oil, I prefer shortening to butter(unless the recipe specifically calls for it). Lucy

BANANA NUT BREAD

1/2 cup cooking oil
1 cup sugar
2 eggs, beaten
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons milk
1/2 teaspoon vanilla extract
1/2 cup chopped nuts

Beat oil and sugar together. Add eggs and banana pulp and beat well.

Add sifted dry ingredients, milk, and vanilla. Mix well and stir in nuts. Pour into greased and floured loaf pan (9x5x3).

Bake in a preheated oven at 350 degres F for about 1 hour. Cool well and store overnight before cutting.

Note: I've been making this recipe for almost 40 years. I don't sift, and we cut it while it is still hot. Also this recipe makes 12 large muffins. Cook them for about 20 minutes.

I use this exact recipe! Have been using it for 40 years too! I got it from my mother-in-law.....here I thought it was an old family recipe!!!!!! Gave me a good chuckle!

The Banana Nut bread is the same one that was famous in the 60's and 70's from woman days encylopedia. my mom and aunt use to make it for us all the time. it is the best receipe have used, follow it exactly - ne need to alter or change as i have tried several times and always seem to revert back to the original version. enjoy...... maria

Thank You for the banana nut bread recipe--I had all 12 of the Woman's Day Encyclopedia of Cookery--books, collecting them through a grocery store in Conn, (1970-1974), I kept them for years-- after we moved to CA in 1974 and somehow lost my mind one day and sent them to a thrift store--I kept 3---but not the one with the recipe for banana nut bread. I searched yesterday and somehow missed your listed recipe--but was delighted today to find it. Thank You, Nancy

Eureka! I found it! This was my favorite banana bread recipe, especially after my husband had a heart attack & we stopped using shortening & butter. I lost my cookbooks 16 mos ago in the Witch Creek fire in Poway, CA & have been unable to find a healthy banana bread recipe that tasted good, was moist, and healthy until today. I use 1/2 whole wheat flour, add wheat germ & oat bran at times, but in small amounts to not affect the bread's integrity! Hurrah!
