BANANA NUT BREAD
1/2 cup cooking oil
1 cup sugar
2 eggs, beaten
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons milk
1/2 teaspoon vanilla extract
1/2 cup chopped nuts
Beat oil and sugar together. Add eggs and banana pulp and beat well.
Add sifted dry ingredients, milk, and vanilla. Mix well and stir in nuts. Pour into greased and floured loaf pan (9x5x3).
Bake in a preheated oven at 350 degres F for about 1 hour. Cool well and store overnight before cutting.
Note: I've been making this recipe for almost 40 years. I don't sift, and we cut it while it is still hot. Also this recipe makes 12 large muffins. Cook them for about 20 minutes.
