This is the time of year that oranges are plentiful and reasonably priced. I always grate the rinds and freeze it in a small plastic container or zip lock bag. Then next summer when I get into the middle of a recipe that calls for grated orange rind I do not have to run to the grocery to buy an expensive, dried out orange! It keeps very well and is also a time saver. Maybe everyone already does this?
