a little porky dish from daddy's side of the family....

I use pork strips for this but any kind is good.

Cube the pork and put it into a large casserole dish. Add tinned chopped tomatoes, peeled potatoes (large ones as they will cook a long time)garlic, chopped onions, tomato puree and soaked washed white beans. Dad used to use dried lima or haricot beans, soaked overnight and then boiled so they are almost soft.

Put the whole lot into the oven with NO salt..and cook for about 3 hours on a medium heat. Season it all after the cooking..if you add salt to the beans they will not soften. (wish I'd known THAT years ago!)

This is a real comfort dish...check it every so often to see if it needs any more liquid - i think mom used to add tomato juice.

sometimes we substituted the pork from smoked sausages - love it!!!!
