In 1984 I was in San Francisco and I was invited to a memorable dinner at a French restaurant called L'Etoile. My host suggested a wonderful breast of Duck in Raspberry Sauce. It was served with Quenelles and a salad. Many years later, here in Puerto Rico, I was served at El Teide Restaurant by its chef Manolo Piqueres (from Barcelona, Catalu a) a spectacular dish known as Duck Magre with Lamb Chops. Unfortunately the duck's sauce is made with raspberries. Therefore I think you are reluctant to serve the duck with a fruit sauce. Nevertheless, if you are interested just look for me at the What's for Dinner Board and I will gladly provide the recipe.
