It's based on the total salt in a dish. If one adds unsalted butter, then one can use the full amount of salt. If using salted butter, however, one would lessen the amount of salt used.

Then there's me, of course! I leave the unsalted issue to her (she's a dynamite cook) and use the salted version in my never-fail citrus curds. The curd turns out tart and sassy and the addition of the salted butter doesn't seem to change the recipe at all. I made up a batch yesterday, using some tired looking, but sound limes. Darlin', my mouth is still remembering the sweet/tart combination with pure-D pleasure!
