Welcome to TKL:-) This is a wonderful site!!!! I wish I had some great, simple, quick recipes for you to try out. I know that other people will help you out too so be patient. DH and I are "empty nesters" so I am in a similar dilema as you are in. Additionally, he works in DC 4 days a week so I am on my own during the week so I eat a lot of leftovers that I have frozen. When he is home, I sometimes cut recipes in half. Other times I make the entire recipe and freeze some for later use. I think lots of people that work full time spend time on the weekend (or whenever you have your days off), cooking, then freezing some so they can defrost it and heat it during the week when they are pressed for time. Another thing you could do is to try using a small crock pot so dinner is ready when you get home from work. I guess that I tend to rely on things like boneless, skinless chicken breasts, steak, pork chops, lamb chops or salmon (or other fish) steaks or filets that can be bought for just 2 people then make a salad and vegetables to fill out the meal. You could also, maybe pick up things for a stir fry that are already cut up so that time consuming task is already done for you and all you have to do is make the stir fry and cook some rice. The down side to that is, of course, the cost for such a convenience. There are a lot of terrific recipes posted...some more time consuming than others. From time to time, recipes are posted for cooking for one or two so you just have to keep checking. Personally, I kind of like having things in the freezer that I can defrost and heat. On Fridays especially, I am often too tired to spend a lot of time cooking and I am ready to "kick off my shoes" and relax a bit:-) Congratulations and best wishes to you and your new, very special DH:-)!!
