CREAM CHEESE PIE
1 cup Quaker Oats, uncooked (quick or old-fashioned)
1/3 cup finely chopped nuts
1/4 cup brown sugar, firmly packed
1/4 cup margarine or butter, melted
FOR THE FILLING:
2 pkg (8 oz each) cream cheese, softened
1/2 cup granulated sugar
1 tbsp lemon juice
1/2 tsp vanilla
2 eggs
sliced strawberries (optional, for garnish)
Heat oven to 350 degrees F.
Combine oats, nuts, brown sugar and margarine; mix well. Firmly press onto bottom and sides of 9-inch pie plate forming a 1/2-inch rim around edge.
Bake 10 minutes or until light golden brown; cool.
In large mixing bowl, combine cream cheese, sugar, lemon juice and vanilla; beat at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each. Pour into prepared crust.
Bake 30 minutes; cool on wire rack. Chill several hours before serving.
Garnish with strawberries, if desired.
