Amy,AR I just thought of something that we like that is fairly quick - that is our version of Chicken Caesar Salad. You could also use shrimp if you prefer.
Chicken Caesar Salad
2 boneless, skinless chicken breasts
Lawry's Mesquite Marinade
1 package romaine lettuce(already cut or torn up)
Croutons
Ken's Lite Caesar Salad Dressing or Ken's Creamy Caesar Salad Dressing(This is our favorite brand but feel free to buy what you like)
Grated Parmesan cheese
Rinse the chicken breasts and dry, with paper towels. Marinate chicken in Lawry's marinade for 30 min. Grill on the barbeque. Slice the chicken and place on plate so each of you can serve yourselves the amount you like. Place the romaine in a salad bowl, the croutons and parmesan cheese each in small bowls, and depending on how formal or fancy you want to be place the salad dressing in a small bowl or just put the bottle on the table:-) Serve with a good, crusty French bread and a glass of Pinot Grigio or Debbie D's Iced Tea (BTW - It's great!!!) You can find the recipe by putting Debbie D's iced tea in the search box. Also, barbequed meats usually reheat quite well. I hope you enjoy this. Feel free to change and adopt it to your own liking.
