Recipe: Creamsicle Smoothie and Homemade Almond Milk
BeveragesCREAMSICLE SMOOTHIE
"All that's missing from this is a little wooden stick. This smoothie is so sweet and yummy it should probably be in the dessert section of this book. And it's always a hit with kids."
1 1/4 cups Almond Milk, purchased or homemade (recipe follows)
1 banana
1/2 orange
1/4 avocado
2 Tbsp agave nectar
2 drops orange extract
Dash pure vanilla extract
2/3 cup ice cubes
Before You Begin: Prepare the Almond Milk
Blend all of the ingredients together in a blender until smooth.
Freshness: 1 day in the fridge
Makes 1 serving
ALMOND MILK
Makes 3 cups
"This is the most basic ingredient you'll need for great smoothies. With a dash of vanilla it can also be great on its own or in your morning cereal."
1/2 cup whole almonds, soaked
2 1/2 cups filtered water
Blend the almonds with the water in a blender at variable speed until all of the almonds are completely broken down and only small flecks of skin remain.
Strain the mixture through a nut milk bag, then transfer it to a mason jar or other airtight container and store in the fridge.
Freshness: 2 days in the fridge
