I also live in the Denver, been in Littleton for 13 years now. The best thing I did when I moved here was to go to the Colorado Extension Agents Office and purchase some of their inexpensive publications for baking. I am including 2 web pages they have. The first one gives some great info. The second one is info on ordering the pamphlets for a very low fee. I have worn out my first copy of "High Altitude Baking"(quick bread recipes in this one, many variations) and this year got a second copy for around a $1.50. If you are near downtown Littleton, you can purchase them at their office and avoid any shipping costs. The address is 5804 S. Datura St ( off Littleton Blvd). There are many Extension Offices all over the metro area depending what county you live in.
If you have more questions, I will try to answer them for you.
