very sorry to reply this SO LATE!!! if you still check in here at all!!! noting the date you posted, i was in the middle of moving out of KL! anyway, that's a very bad excuse.

to answer your Qs.

1. I do not fold but beat lightly (only till the mixture looks even) with the electric beater.
2. i lightly mix teh wet mixture with a fork.
