PINTO BEAN PIE (with coconut)
1 1/2 cups sugar
1/2 cup cooked, unseasoned pinto beans, drained and mashed
1/2 cup coconut
1 stick (1/2 cup) butter or margarine, melted
2 eggs, beaten
1 tsp. vanilla
1 unbaked (9-inch) pie shell
Mix all ingredients together well and pour into an unbaked pie shell.
Bake approximately 1 hour at 350 degrees F or until set.
PINTO BEAN PIE (with coconut and nuts)
Makes 3 pies
3 cups sugar
2 sticks (1 cup) butter or margarine
4 eggs, beaten
1 cup Baker's angel flaked coconut
1 cup cooked, unseasoned pinto beans, drained, mashed
1 cup pecans, chopped
2 unbaked (9-inch) pie shells
FOR SERVING:
whipped cream
pecan halves or whole cooked pinto beans
Melt sugar and margarine together in a saucepan. Remove from heat and cool slightly.
Pour eggs into margarine and sugar mixture and quickly mix. Add coconut, mashed beans and nuts. Pour into unbaked pie shells.
Bake at 350 degrees for about 1 hour or until set.
To serve; top with whipped cream and top with pecan halves or whole cooked pinto beans.
PINTO BEAN PIE (MOCK PECAN PIE) (with spices)
1 1/2 cups sugar
1 tsp. ground allspice
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 1/2 cups cooked, unseasoned pinto beans, drained and mashed
1 whole egg, beaten
2 egg yolks, beaten
1 tsp. vanilla
1 unbaked (9-inch) pie shell
Combine sugar and spices in a medium mixing bowl; mix well. Add beans, egg, egg yolks and vanilla; mix well until smooth. Pour into pie shell.
Bake at 350 degrees F for 15 minutes. Reduce heat to 300 degrees F and bake 45 minutes or until set.

I hope that one of these recipes will be similar to the one you're looking for. You mentioned coconut and spices but the recipes I found either had coconut or spices so maybe your Mom combined the recipes, adding spices to the coconut version to make hers. If her recipe turns up please share it with us!
