coconut cream and milk

don't think coconut cream is "sweet" unless it's been added with sugar???? anyway, i live in the part of the world that coconuts are part of the regular diet. from what i know is that coconut cream is "thicker" and milk is "lighther". they are the products of old coconut fresh. the first one is usualy the 1st squeeze from the fresh (with much less /or no water blended) and the later one is the 1st/2nd/sometimes even 3rd squeeze of the fresh blended with much more water.

in generaly cooking, both are fine. if you like creamy gravy (ie in curry dishes), then use the cream. if not, the cream can be diluted with water added, or use the milk form. coconut flesh is high in cholestrol so my suggestion is to dilute it a bit. another popular practice is to use 1/2 the cream/milk + evaporated milk (for health reason). however, this later method betetr applies to savory dishes. my experience is to thinner the cream (and do NOT use evaporated milk) in dessert dishes as the result isn't as satisfying.
