Italian beef

Ingredients:
2-3 lb beef roast
cup vinegar
1 pkg dry Zesty Italian dressing
1-2 cubes beef boullion (I use 2)
4-5 sweet Italian peppers (optional)

Method:
Sear roast in skillet. Place in crockpot and pour vinegar over meat (to tenderize). Sprinkle dressing over and add boullion. Cook on high, about 4 hours. USe 2 forks to shred meat as it cooks. Sometimes I add a little more vinegar for tanginess and it helps the meat shred easier. Add peppers during last 30 minutes of cooking. Serve on hoagie rolls.
Note: This will taste better the day after cooking. The flavors really blend.

Leftovers are good in stew.
