Hi LaDonna! This is a longshot, but here is the closest recipe I could find in my recipe files so far. Maybe for the fillng they mean just a layer of plain applesauce under the cheese topping? If you happen to try this let us know how it turns out!! - Happy Baking, Betsy
BELGIAN PIE
FOR THE CRUST:
4 tbsp. shortening
4 tbsp. sugar
1 egg, well beaten
1 cup milk
4 tsp. baking powder
1/2 tsp. salt
Flour, enough to make a soft dough
FOR THE FILLING:
For filling you may use prunes, applesauce or pineapple
FOR THE CHEESE TOPPING:
1 lb. collage cheese
1/2 cup cream or evaporated milk
3/4 cup sugar
2 eggs, well-beaten
Pinch of nutmeg
TO PREPARE THE CRUST:
Cream shortening; add sugar and cream until well blended. Add egg and milk; mix.
Add the baking powder and sail with the first cup of flour, then continue adding flour until you have a soft dough. Divide into four parts and form each into a ball. Roll out to fit the bottom of a pie pan, coming up the sides a little to hold the filling. Add your choice of filling.
Mix all the ingredient for the Cheese Topping together and put through sieve over the top of the filling.
Bake al 425 degrees F for 20 to 25 minutes.
