Recipe(tried): Crockpot Vegetable Beef Soup

Menus

This is so funny! As we speak, people are bringing their crockpots in to the office for the Fourth Annual "Crock Off" at my company! Here is what I brought, and it is simmering in the cafeteria right now:

Briz's Vegetable Beef Soup

1 1/2 lbs top round or flank steak
1 large potato, peeled and cubed
2 large carrots, peeled and sliced
1/2 lb fresh mushrooms, sliced
1 sweet onion, diced
1 heaping T. minced garlic
1 28 oz can Contadina crushed tomatoes with Italian seasoning
3 cups water
3 tsp. beef base
1 tsp Italian seasoning
1/2 tsp black pepper
1/2 tsp. crushed red pepper
1 T. A-1 steak sauce
1 T. Worcestershire sauce
1/2 c. frozen corn
1/2 c. frozen peas
1 bouquet garni

Add all ingredients to the crock pot EXCEPT corn, peas, and bouquet garni, layering the carrots and potatoes on the bottom. Turn the crock on LOW in the morning. Go to work. Get home, give it a good stir, and add the corn, peas and bouquet garni. Let simmer for 1/2 hour longer, and it is ready to serve.

It gets even better the next day if you can wait that long!

Wish me luck! I'm up against some stiff competition today. Someone is bringing Lobster Newberg, so I'm not sure if I stand a chance! One thing is for sure though...we're going to have some fun today!

Enjoy your new crock pot!
