French / Italian Buttercreams

Carol, the difference in french and It. buttercreams is really clear if you are going to ask Rinaldos.

French is made with egg yolks, whipped to ribbon, hot sugar syrup added, then whipped till cool, then cold butter added.

Italian is the same only egg whites are used instead of egg yolks.

Both are wonderful! Once you've had them, you can't go back to American buttercream AT ALL!!!!
