Recipe: Olga's Peasant Soup

I just ate at Olga's yesterday with my Daughter and Grandson - we had the Peasant Soup and I am bound and determined to make it - when I get on a mission I don't stop. The closest I've found on the internet so far is this one... I'm thinking instead of the frozen mixed veggies - I would use fresh carrots, baby peas, and fresh green beans and simmer it for hours. I thinking there would be more flavor from the veggies....

I have not tried it yet - I've been making Dog Treats today.....

I have eaten at the original Olga's in the Detroit area since the late 1970's. The Peasant Soup is made with Gyro (lamb) meat. No pork. When I make this at home, I use 1 lb. ground lamb, 1/2 cup quick barley, 2 small zucchini cut up, 1 medium onion, 2 stalks celery, 2 diced garlic cloves, and 8 oz frozen mixed vegetables. As a base, I use vegetable soup base and a 15 oz. can of diced tomatoes. I use oregano instead of thyme along with the bay leaf, dried parsley, salt, and pepper. You can use half ground beef and half lamb if you prefer.
