hi BG!!! (little pineapple tarts)

hi BG,

long time no see...

this is a chinese (but western influenced) little pineapple tarts. growing up in taiwan, i thought taiwanese were good at making these. boy, was i wrong. as pineapples are tropical fruits, the best i'd ever tried are the malaysian ones homemade by housewives for chinese new year. as Ong-Lai (pineapple in Hokkien) has the meaning of prosperity, this is a MUST-HAVE dessert during the festive season. Malaysians really perfect this dessert by making it shapes!
you can fine them rolled in melt-in-your-mouth pastry or with pineapple jam filled on top of little shortbread type cookies. i am not sure if i have posted one recipe for JulieC/SA under (maybe) "pineapple tarts" on the ethnic board. (I did send some recipes and the little gadget to her by snail mail! LOL) anyway, if you to make sure they are the right recipes, i can e-mail you in private with pictures and details, please ask Betsy for my contact info.

they aren't easy to make coz you have to make the pineapple jam from scratch... and trust me, it's a long process!
